I’ve been fortunate to work in celebrated restaurants such as Dinner by Heston, Restaurant Mauro Colagreco and Trivet, and in 2024 was honoured to be named UK Sommelier of the Year. At Labombe, I’m excited to showcase wines that are adventurous yet approachable, shaping a dynamic list that sits at the heart of the dining experience.

After a decade with Dinner by Heston in both Knightsbridge and Melbourne, I spent two years in Catalonia, Spain. At Labombe, I’m excited to blend the flavours and relaxed dining styles from the continent with the standards and techniques honed over my career thus far. Monday evenings at Trivet have been a great time to work alongside Jonny on an impactful food offering that sits happily alongside Philipp and Isa’s European focused wine selection.

As a Master Sommelier and co-founder of Trivet, I’ve spent my career exploring how wine can be both exciting and approachable. At Labombe, I aim to create a wine list that zooms further into different terroirs of Europe whilst being full of surprises. In some way, each bottle will have a quirk that, I hope, will really excite our guests.

My journey from Burlington to London has been a whirlwind of learning, growth, and culinary exploration. From early days in Montreal to enriching experiences in Italy, France and the UK, I have always tried to push the limits of what’s achievable in the kitchen. Ultimately this has led to Isa and I working with Evan and Philipp on the opening of Labombe and I couldn’t be more excited to show everyone what we have created.

Labombe by Trivet is a space for joy and spontaneity, where expertly curated wine and thoughtfully crafted food meet a warm, welcoming atmosphere.

Open from noon until late, stop by for a cocktail and a snack at the bar, or settle in for a long evening with friends.

An ode to Jonny Lake’s aspirational fictional restaurant, imagined as part of a French project at school, Labombe has found the answer to his teacher’s remark “Où sont les boissons?” with his concept being brought to life in Mayfair 30 years later. 

 

Having garnered considerable attention during its trial residency at Trivet each Monday night, Labombe brings back a playful sophistication to the storied Met Bar location, marrying extra-special wines with a more relaxed style of cooking at the same exceptional standard. 

 

For years, Jonny and Isa Bal have honed the craft of bringing food and wine into seamless balance. Now, they are passing the baton to the next generation: Head Chef Evan Moore and Sommelier Philipp Reinstaller, who bring energy, skill, and fresh ideas to the table. Under their guidance, Labombe continues Trivet’s legacy in a bold, spirited guise.
